I was recently shopping at a Trader Joes trying to find apple butter when I stumbled across pumpkin butter. I had no idea it even existed! Since the store was out of apple butter and the jar of pumpkin butter was very intriguing, I decided to try it out on my pork chops.
In search of recommended recipes, I perused my Yummly app for pumpkin butter recipes but ended up empty-handed. It seemed that most people use pumpkin butter to supplement desert recipes. Not surprisingly, pumpkin butter has a very sweet taste much like pumpkin pie. Determined to incorporate it into my meal, I created my own pumpkin butter dish.
I started off with a dry rub of salt, black pepper, paprika, mustard powder, onion powder, garlic powder, and red pepper flakes. I usually measure out my portions of seasoning based on my taste. I tend to be heavy on the paprika and garlic powder.
I marinade the pork chops for about an hour before frying them in a pan with coconut oil. As the pork chops cook, I add a few table spoons of the pumpkin butter to the frying pan. I make sure each side of the pork chops are fully cooked or brown in color. Once they were done, I removed them from the pan and created a pumpkin butter sauce with the rest of the jar in case my boyfriend wanted it a little saucy.
